


Chettinad Brinjal Kosumalli Side Dish For Akki Roti, Idli , Dosa , Chapathi & Rice too…

💁Ingredients
2 Roughly chopped Brinjals
2 Roughly chopped Potatoes
1 finally chopped tomato
2 finally chopped onions
4-6 slit green chillies
Berry size Tamarind
1/4 tbsp turmeric powder
1 inche jaggery
Handfull of ✊ Coriander leaves
Salt to taste
💁For Seasoning
3 tbsp Oil
1/2 tbsp mustard seeds
Few curry leaves
1 broken red chillie
💁Method
Wash brinjal & roughly chopped into 4 pieces & add water in it. Peel potato wash & roughly chopped them into 4 pieces..
In a cooker pan add brinjal & potato along with slit green chillies 💁optional. Pressure cook for 2 -3whistles. When its cool open the lid mash then well & keep aside.
Soak tamarind in water & take the extract pulp.
In a kadai heat 3 tbsp oil add mustard seeds & few curry leaves & slit green chillies splutter the tempering.Now add onions Saute it for 2 mins.add tomatoes Saute for few mins.add turmeric powder, salt to taste.
Now add the mashed Brinjal, potato & green chillies.add drained water from the veggies ,tamarind extract & jaggery allow it to boil nicely for 3-5 mins. 💁This gravy should be slightly watery consistency.add handfull ✊of chopped coriander leaves…Ready to Serve Brinjal Kosumalli Garnish with plenty of coriander leaves goes well with Akki Roti ,Idiyappam , Idli, Dosa , Chapathi & Hot Rice too.
