Today’s Spicy Pav  Bhaji The Most Popular Street Style  Fast Food of Mumbai Special All time favourite . Pav Bhaji is a dish that can be enjoyed at any time of the day . 💁Like it for Brunch, Lunch or Even Snacks or as a Dinner.The fragrance of the various masalas &  the flavour of the various veggies the smell was so good and Pav bhaji is a complete meal by 🍔🍞 itself.

💁Ingredients

Rinse, peel and chop the veggies
1 cup chopped cauliflower
1 cup chopped carrot
1 medium chopped Capsicum
2 medium  potatoes
1 small beetroot  beetroot gives nice colour option
1/2  cup green peas 💁fresh or frozen.
You can also add veggies of your choice.
3 -4  tbsp butter
2 tbsp oil
1 /2 tbsp  jeera
3 medium chopped onions
   1 tbsp  Ginger-garlic paste
1 tbsp chopped green chilie
2 medium chopped tomatoes
Handfull ✊ of chopped  coriander leaves
2 tbsp Kashmiri red chilli powder
3 tbsp Pav bhaji masala powder.
salt to taste
Required water

  Other Ingredients 💁For Plating

8-10 pav
1/2 cup Raw onion
Chopped coriander leaves
Few Lemon wedges
2-3 tbsp Butter 🧈

💁Method

Pav Bhaji Cooking veggies for bhaji.

Rinse, peel and chop the veggies. You will need 1 cup chopped cauliflower, 1 cup chopped carrot, 2 medium  potatoes hopped 1 small beetroot  beetroot gives nice colour option and 1/2  cup green peas 💁fresh or frozen.
You can also add veggies of your choice.

Add all the above chopped veggies in a 3 cup of water pressure cooker. Pressure cook the veggies for 3 whistles .When the pressure down open the cooker .The vegetables have be to cooked completely. Keep the vegetables along with the cooked water 💁stock in the cooker itself.

Heat a  kadai . Add 3  tbsp butter Let the butter melt. Add 2 tbsp oil add 1  jeera..Let the cumin seeds crackle and  Then add  1 finely chopped  Capsicum & 2 chopped onions and saute on a high flame till translucent.Then add 1 tbsp  gingergarlic paste.Mix and saute till the raw aroma of both ginger and garlic goes away.


Now add 1 tbsp chopped green chilies Mix well. Now add  1 cups finely chopped tomatoes.Mix very well..  tomatoes  Saute till the tomatoes become soft and mushy . When the tomatoes have softened, then add  finely chopped  coriander leaves add 2 tbsp Kashmiri red chilli powder, 1 small pack or 3 tbsp Pav bhaji masala powder. depending on how strong is the aroma and flavor of pav bhaji masala add salt to taste Mix very well.Add the cooked veggies.Mix well.

Now add all of the stock or water from the pressure cooker in which the veggies were cooked. Use a potato masher, begin to mash the veggies directly in the pan… consistency you want in the pav bhaji. For a smooth mixture mash more. add more water if the bhaji looks thick.Keep on stirring occasionally and let the pav bhaji simmer for  15 mins on a low flame.

💁If the pav bhaji becomes dry and then add some more water. The consistency is neither very thick nor thin 💁  check the taste.

💁Plating

Frying Pav For Pav Bhaji… Slice the pavs from the center.Heat a tawa or a shallow frying pan. Keep the flame to a low and then add butter.Now place the pav / bread 🍞 on the butter.Rotate the pav all over the melted butter little bit bhaji masala so that the pav absorbs the butter masala flavour too.

Now take the bhaji in a serving plate or a bowl.Top it up with butter. Place a side of finely chopped onions, lemon wedges and finely chopped coriander leaves. Ready to taste..🍞🍔🧈Pav bhaji .
