Elephant Yam Stir Fry / Suvarnagadde Palya

Ingredients
๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡
1/2kg ๐Ÿ˜ Elephant Yam 1 cup
1 cup grated coconut
5 to 7 Byadgi red chillies
1 tbsp jaggery
lemon sized tamarind extract
ยฝ tbsp turmeric powder
1 tsbp dry Rosted mustard seeds
1tsbp dry Rosted zeera
salt to taste
Few tbsp of coriander leaves

seasoning

1 tsbp mustard seeds
1tsp zeera
1 dried red chilli
1 tsbp channa dal
1 tsbp urad dal
10 curry leaves +little chopped coriander

Method

Peel the yam and chop it into small cubes.wash it with running water water.. Now Boil the yam in plain water till it is cooked softโ€ฆ it takes 15 mins to cook on medium flame while off the flame add ๐Ÿ‘‰ little salt .Soak the tamarind in warm water for few minutes and extract the juice.Once the yam is cooked almost, drain excess the water.

In a cooking pan, add a 2 tbsp of oil and
once the mustard seeds splutter
Add all the seasoning ingredientsโ€ฆlike chana dal, urad dal, zeera, whole dry red chillies & curry ๐ŸŒฟleaves fry till colour change. add cooked yam.Now add again little adjust salt, jaggery, turmeric powder and tamarind extract to the the pan and mix well.Cover and cook on a low flame till all the tamarind extract is absorbed well. Now u prepare Coarsely masala grind coconut, rosted red chilies ,Dry rosted 1 tbsp zeera Dry rosted ,1/2 tbsp mustard seeds.
๐Ÿ‘‰Do not add water ๐Ÿ’ง the masala should be dry.When the suvarnagadde/ yam are well cooked and it has absorbed the tamarind extract completely dry water.Now itโ€™s time to add the ground coarsely masala and mix well. stir for few minsโ€ฆ and turn off the flame.Ready to serve with add some fresh coriander leaves.Suvarnagadde palya / ๐Ÿ˜ Elephant Yam Stir Fry is Ready To Be Serve .
