


Capsicum π« π Rice With Any Your Choice of Raita
This can be an Ideal Lunch Box Recipe. My Kidsβ¦.π as Love this Capsicum π« π Rice Bath gets tastier by time .βπ Capsicum Riceπ« πIs a very quick and delicious breakfast. This recipe uses lots of colorful veggies like Tomato , carrot & capsicum. π€& You can use any ur choice of veggies too.
ππIngredients
1 cup Basmati long grained rice or πyou can use Raw Rice too up to ur choice
1 cup capsicum π« thinly Sliced
2-3 tbsp Oil +1 tbsp ghee
1/4 tbsp mustard seeds
1tbsp Ginger garlic paste
2 medium size onions
2 medium size tomato
1 cup fresh grated carrot π₯
1 tbsp red chilli powder
1/2 tbsp coriander powder
1/4 tbsp gram masala powder
1/4 tbsp pepper powder
1 tbsp pav bhaji masala powder
Salt to taste
1tbsp Lemon π juice
Handfull β of chopped coriander leaves
ππMethod
Wash & rinse the rice for 20 mins properly. Then cook the rice in a pressure cooker along with 2 cups of water, few π§ drops of oil & little salt for 2 whistles are enough.Donβt cook the rice till it becomes mushy or too soft. Spread on a plate so that grains doesnβt stick to eachother. Let the rice cool keep aside.
Heat oil + ghee in a pan or kadai. add mustard seeds & finely chopped onions ,when u get nice aroma add ginger garlic paste and stir fry for 2 mins on a high flame. Now add the chopped capsicum and tomato and stir fry for 2 mins on a high flame begins to get lightly browned from the edges add fresh grated carrot mix nicely few seconds. Add red chilli powder, coriander power, pav bhaji masala powder, black pepper, gram masala powder and salt to taste.
Now add cooked basmati rice and finely chopped coriander leaves stir fry the rice toss gently to blend .Now simmer the flame and cook covered till the rice has absorbed masala spicy for 3-5 mins till it becomes hot. Add Lemon juice switch off the flame. Ready to Serve Capsicum π Rice.
