Healthy Rice & Fenugreek Seeds Porridge / Starch / Mangaloren Menthe Ganji

💁This healthy rice and fenugreek gruel is a simple yet extremely nutritious porridge. Fenugreek seeds are rich source of Vitamin B contains which has several healing  properties . Improves the skin complexion and gives glow to the skin.  It even purifies blood, helps prevent pimples and wrinkles.  The coconut 🥥 milk in this recipe adds extra flavour. In Mangalore this porridge is specially made for In Mangalore it’s a Tradition to have this menthe ganji early in the morning on the 💁🙏 Aati Amavasya day . Today after having a tbsp of ☺️Butter Kasaya.  Do give this recipe a try. As you can relish it as a 😋  kheer Menthe Ganji With Pure Ghee Drizzled On Top.

💁Ingredients

2 cup raw rice
3-4 tbsp fenugreek/ methi seeds soaked for 👉over night or 3 hours before
1 cup grated  jaggery
1 big  whole fresh grated 🥥 coconut milk
1 🤏pinch of salt to taste
4 -5 tbsp Pure ghee as required
8-10 cashew nuts
3 tbsp raisins
1/2 tbsp Cardamom power

👉Method

Wash and soak the methi seeds in required 💦 water for overnight or 3  hours before.

Wash the raw rice and pressure cook along with soaked fenugreek seeds and 4 cups of  water 💦 for 3-4  whistles.

Now  extract coconut 🥥🥛 milk by blending fresh grated coconut with water 💦 and straining it .

Add the jaggery, cardamom power and coconut 🥥🥛 milk to the cooked  rice & methi mixture and let cook till the jaggery melts  stirring continuously & keep gas flame low and the Ganji  is slightly thick consistency.

Heat ghee in a pan roast cashew nuts & raisins until golden brown . Transfer into the Menthe Ganji is Ready. Pure ghee drizzled on top and serve piping hot.
