



Hot Hot Vada / Uddina Vada With Coconut Chutney & Sambar
Some people find it difficult to make a perfect hole 💁in the vada . So here is a trick for such people, 💁Tie a white or any colour thin 💁wet cloth on a medium sized blow .Tie it tightly on the backside of the bowl .Now turn up the bowl, place some vada batter on it .Then wet your index ☝️ finger & make the hole in the batter .Flip the bowl gently into hot oil.
💁Ingredients
1- 1/2 cups of urad dal
3-4 tbsp of idli rice rava /Bombay rava
5- 6 green chillies chopped
5 tbsp of fresh chopped coconut🥥 pieces
3 string curry leaves
Handfull ✊ of chopped coriander leaves
1 inch ginger finely chopped
2-3 Pinch baking soda 🤏
Salt to taste
oil to fry
💁Method
Wash and soak dal 2-3 hours.Drain all the water from soaked dal. grind urad dal smooth paste using very 💁little water 💁i have used grinding stone.
💁Wet grinder or even mixer grinder u can be used.
The batter should be thick and use very little 💦 water.the right consistency is very important or otherwise , you will not be able to get the 💁Vada shape.
Add green chilli, ginger , curry leaves, coriander leaves ,chopped 🥥 coconut pieces , salt to taste and baking soda to the batter. mix it very well. 💁Add 3 -4 tbsp of idli Rava or Bombay rava is added to make it crispy. to make it more digestible.
Heat the oil in a frying pan in medium flame.
Wipe the bowl it off with your wet hand ✋ Then put some vada batter on it and make the hole with your finger.☝
The vada slips into the oil.The vada should float on top of oil. make sure your oil is 👉not too hot. otherwise the vadas would 👉not cook evenly. Fry on both sides till it becomes golden brown in colour.
Ready to Serve Vada immediately with chutney & sambar. With cup of ☕ Coffee/ Tea.
