Methi Aloo Sabji Simple North Indian Style Potatoes And Fenugreek Dry Sabji.

All of us love recipes that are simple for everyday meals and this is one of them. I make this Methi Aloo to serve with rice and rasam. Sometimes I also pack this for the kid’s lunch box as a side to Plain paratha, Roti .

💁ingredients

2 bunch Methi leaves/
Fenugreek leaves
3 medium size potatoes chopped in cubes
3 medium size chopped onions
3 tbsp oil
1/2 tbsp mustard seeds
4 -6 Green chili slit
4 -6 cloves garlic Chopped
1/2 tbsp jeera
1/4 tbsp turmeric powder
1 🤏pinch sugar
Salt as taste
3- 4 tbsp fresh grated coconut

💁Method

Clean Methi leaves and add it to a large bowl filled with 💦 water wash.

Peel potatoes cube them. Add them to a bowl with little 💦 water to prevent potatoes from getting discoloured.

Heat the pan Pour a tbsp of oil add mustard seeds and cumin. When they begin to crackle, add chopped garlic ,green chillis and fry till it begins to smell good. Now add potatoes cubes and turmeric power. Fry for 2 -3 mins. Just saute them in oil stirring often until soft cooked.

Wash & drain the methi leaves completely. Chop them finely. Check if the potatoes are cooked by piercing a fork into the aloo.When the aloo is soft cooked, Add little salt & Sugar. Stir and fry for a mins.Add chopped methi leaves . Keeping the flame on low mixed well & fry until the leaves cook off.👉 Do not use water.👈 Do not over fry to prevent nutrition loss. Add some fresh grated 🥥 coconut.

Ready to Serve Methi Aloo with Rice 🍚 & Roti.
