




Mangalore Cucumber Sweet Dosa / Magge Surnali With Fresh Ghee Lovely Combination With butter ๐ง Too
๐Ingredients

2 -1/2 cup dosa rice
1 cup Mangalore cucumber pieces
1/2 fresh ๐ฅฅ coconut
1 small cup Bhel / puffed rice..
One pinch turmeric power
jaggery as per ur taste u can adjust
Salt to taste
๐Method
firstly, in a large bowl, soak dosa rice for atleast 4 hours. Drain the water from soaked rice.
In a mixer jar first grind ๐ฅฅ coconut & skin peeled roughly chopped cucumber pieces , turmeric make it smooth paste.
Than add soaked rice & bhel ๐as per u r sweet add jaggery blend to smooth and fluffy batter. ๐if needed add water ๐งto make Dosa consistency batter.
collect it into a large bowl ๐ฅฃ add salt to taste and mix well making sure the batter has combined completely. Also clean the sides with yourโ hand.
Cover and ferment in a warm place for 8- 12 hours over night . ๐Nicely fermentation is must ๐needed otherwise dosa get ๐ชจ hard. The next day you can see ๐๐๏ธ the batter has raised ๐ well indicating its well fermented. mix the batter slightly.
Take a tava heat now pour a ladleful of the batter spread medium thick ๐Don’t make very๐ thin dosa. top with a tbsp of oil or ghee cover and cook for a 3 mins or until the base is cooked well.
