Egg Drop Curry / Broken Egg Gravy With Hot Hot Chapathi & Rice

Egg Drop Curry / Broken Egg Gravy / 💁 It is a quick curry which we can reserve for lazy Sundays. Usually, our regular egg 🥚 curry with boiled eggs can also be made very quickly, but the speciality In this  Egg drop curry is that it the eggs don’t need to be 💁boiled separately.

💁Ingredients

3 tbsp oil + 1 tbsp 🧈 butter
4 -6 Eggs 🥚🍳
3 medium Onions finely chopped
1 tbsp Ginger garlic paste
1/4 tbsp turmeric powder
1 -1/2 tbsp red chilli powder
1 tbsp coriander powder
1/2 tsp garam masala powder
Salt to taste
2  finely chopped slit green chillies
Handful ✊ of chopped coriander leaves.

💁Ingredients for  Masala Paste

1/2 cup 🥥 Coconut
Tamarind 💁small gooseberry size
2  medium size tomatoes
1/4 tbsp cumin seeds
1/2 tsp Fennel seeds

💁Method

Keep all the ingredients ready as mentioned above.

Take a broad vessel with flat bottom, pour oil & butter 🧈 and season with the items given
Add finely chopped onions,  ginger garlic paste and saute till the onion becomes brownish in colour.

Add coconut 🥥🍅 tomato masala paste and cook till masala turns thick and you see 👀 👁️ oil separating from the sides of the pan.  Add all dry masala powders given above and salt to taste saute till oil leaves from the masala & Now add water 💦 the quantity depends how you prefer the end consistency to be. bring it to a boil.once the raw smell of the  masala goes off.Add finely chopped slit green chillies & coriander leaves.

Now break open eggs 🥚 one by one into the boiling sauce. Be gentle and quick. Drop the egg carefully half inch about the sauce surface. Arrange all eggs next to each other into the gravy. pour some gravy over the egg 🥚 so that the egg will get cooked faster. Cover the pan and cook for about 3-5 mins but do not stir or move the pan.

Once the eggs 🥚 are cooked, switch off… Serve With  Chapati, Neer Dosa, Appam & Parota This Curry Goes Well With 🍚 Rice Too.
