Mangalore Goli Baje / Bonda With Coconut Chutney & Cup of Hot Hot Coffee ☕

💁Mangalore  Goli Baje/ Bonda is a popular street food snack. Is a delicious evening snack . These bajjis are usually served along with coconut chutney  and  cup of coffee which is a must along with it.Mangalore Bajji, It is made using maida which is mixed with a sour curd, green chillies, coriander, ginger and soaked for an hour before frying them in hot oil. 💁It is fairly easy to make, and requires very few ingredients that are easily found in the pantry.

💁Ingredient

1 big  cup Maida
1/2 Gram flour/ besan
1 cup Curd (Dahi / Yogurt)  sour
1/4  tbsp Baking soda
6 -8 finely chopped Green Chillies
1 inch finely chopped ginger  
Few curry leaves 
Handful ✊ chopped Coriander Leaves 
2 cups oil , for  deep fry
1 tbsp sugar
Salt to taste

To begin making Mangalore Bajji /Goli Baje

Take a big bowl, add the sour curd and whisk it till you attain a creamy texture.To this add the chopped green chillies, coriander leaves,  ginger, curry leaves and salt & sugar  mix well.
Slowly add in the maida  & Gram flour/ besan  and mix well. Add water little at a time till you get a thick pouring batter consistency.

Add the baking soda mix well and leave it aside for an hour.

Heat oil in a kadai.In the meanwhile, whisk the Mangalore Bajji batter. Once the oil is hot, drop half a tbsp amount of batter into the hot oil. Let it cook and turn golden on one side.

Flip over and cook the other side as well. This will take 2 -3 mins. Remove it in a tissue paper and proceed to make the rest of the Goli Baje with the remaining batter.

Serve Mangalore Bajji  along with  Coconut Chutney & cup of hot hot ☕ coffee.
