


Kuska Rice ๐Plain Biryani Serve Any Your Choice of Raita / Salan
๐It is nothing but a one pot vegetarians plain biryani rice made without any meat or veggies. Also know as Kuska rice. It is simply flavor packed & can be eaten without any sides . But in restaurants it is usually served with a gravy known as ๐salan. A lot of people also eat this with kurma or even Raita .This style Kuska Rice or plain biryani cooked in onion tomato ๐ base ๐ flavored with spice masala powders, mint and coriander leaves. Totally different in taste.
๐Ingredients for Seasoning
๐Here I m used 2 cup of Basmati Rice. But u can use zeera rice which is short-grain rice, actually very tiny grains compared to basmati. as per u r choice.
Whole spices๐๐
1/2 tbsp shahi jeera
3-4 cloves
3 green cardamom + 1 Black cardamom
1 star anise + 2 Javitri
2 bay leaf
2-4 pieces cinnamon stick
1/2 tbsp fennel / saunf
2 marathi moggu
8-10 pepper corn
3-4 tbsp oil + 2 tbsp ๐ง butter
3 medium chopped Onions
2 medium chopped tomatoes
1/2 cup Plain yogurt
1/4 tbsp Red chilli powder
1/4 tbsp Turmeric powder
1/2 tbsp Garam Masala power
1 tbsp biryani masala powder
1 tbsp coriander powder
Handfull โ chopped Coriander leaves
1-1/2 tbsp Lemon ๐ juice
4 cup of water ๐ฆ
Salt to taste
๐Ingredients For Green Masala
Paste
Handfull โ Mint leaves
Handfull Coriander leaves
8-10 green chillies
6-8 cloves garlic
1 medium size roughly chopped onion
1 inches ginger
1/2 tbsp pepper
Salt to taste
๐Method Kuska Plain Biryani Rice
First, wash the 2 cup of basmati rice under running water until water runs clear. Then soak them in enough water for about 15-20 minutes.
Firstly, in a small blender take onion, ginger garlic, pepper, green chilli , Salt to taste and handful of โcoriander leaves & handfull โ Mint leaves .Blend to smooth paste adding of water keep aside.
In a pressure cooker heat 2 tbsp butter ๐ง & oil on medium heat. Add shahi jeera and let them sizzle a bit. Then add whole spices ๐cloves, cardamom, star anise, bay leaf, Javitri,Black cardamom , cinnamon stick fennel / saunf ๐ saute for 1 mins whole spices. Then add sliced onions.and cook till they become soft and light pink or translucent in colour. Now add chopped tomatoes ๐ mix and cook for 2 -3minutes or till the tomatoes become soft.
Add the prepared green masala paste mix well saute nicely till oil zoom out from sides & raw smell of ginger-garlic goes away. Add turmeric powder, biryani masala power, red chilli power ,garam masala powder , coriander powder and salt to taste. Mix well and cook for few seconds.
Now low the heat and add whisked yogurt and mix immediately and saute till the combines well without masala curdling.
Add soaked, drained ๐ rice mix and saute in masala for few minute. Then add 4 cup of ๐boiled ๐ฆ water the heat to high and bring it to a rolling boil. Add lemon juice. Then cover with a lid, for 2 -3 whistles on high flame or till rice gets cooked completely.
Then turn off the stove and let it stand for ๐10 minutes without opening the lid. Then uncover and fluff up the rice cooked kuska Plain Biryani Rice.
Ready Serve kuska with any other Gravy or your choice of Raita. ๐๐๐
