Ragi Mudde With Upsaaru / Palya /Stir-Fry Mandya/Mysore Style

💁Upsaaru & Palya/Stir-Fry The literal meaning of basida saaru is Drained water or vegetable stock.

💁Ingredients Here I m used all mixed Pulses /Grains like 👇

1 cup Mung / Green grams
1 cup matki
1/2 cup Masoor ki Dal
1/2 kg Ridge gourd / heerekai

💁For Chutney Or Hasi khara

1 bunch Coriander leaves
8-10 Green chillies or red chilli 👉 We want the chutney to be very spicy as per ur spicy u can add chillies
Small marble size Tamarind
1 tbsp Cumin seeds
1/4 tbsp Pepper Corns
1 pods Garlic
Salt to taste

💁Other Ingredients Seasoning

2 tbsp oil
1/4 tbsp Mustard seed
4 Green chillies
1/2 cup Onion
3tbsp Fresh coconut 🥥
Salt

💁Method

Wash the Ridge gourd / heerekai one by one in the running water thoroughly. Chopped them add about 3 -4 cups of water & boil the Pulses in a sauce pan. Till 90% cook Add salt for tasty . Keep adding water if you find the very thick. You might need of cups of water.drain the water save the drained water.💁 We will make a upsaaru saru using the drained water.

💁 Palya/Stir-Fry

Add oil to a pan. Once the oil is hot, add mustard When seeds crackle, add green chillies now add finely chopped onions & saute till the onions turn translucent.When the onions are cooked, add the mixed Pulses &
Ridge gourd mixture add if required some salt & fresh coconut give it a mix. Turn off the heat ready to serve…

For the Hasi khara Chutney

Soaked tamarind, garlic along with the skin of the garlic Add coriander leaves, green chillies, cumin seeds, salt, pepper corns If needed add water few drops In a small jar make it fine paste.

Scoop out the chutney in a separate bowl.

💁For Upsaaru

Take a pan add 1 tbsp oil Add mustard seeds, 4-6 garlic, curry leaves & broken red chilli add about a tbsp of khara/chutney prepared to the drained water 👉Stocking & mix. Adjust the salt & boil it. Upsaaru is ready.

Finally serve the Thali Add a portion of mudde ragi balls to a plate. Pour in cup of saaru, Palya/Stir Fry at the side along with a tsp of extra Chutney. For adjust the spice level of the Upsaaru. Enjoy your delicious Mouthwatering Upsaaru Mudde.
