It is spicy and piping hot, super duper delicious! Home Made Dry Garlic Chutney For Vada Pav..Nothing beats the taste of famous Mumbai street foodโ€ฆgarma garam vada pav! Decided to Satiate My Cravings On This evening.. ๐Ÿ˜‹๐Ÿ‘Œ๐Ÿ’ž

๐Ÿ’For Aloo Vada Mixture

2 tsp oil
ยฝ tsp mustard
pinch of hing / asafoetida
few curry leaves
1 inch chopped ginger
2 clove chopped garlic
2 tbsp green chillies paste
Handful โœ‹ chopped coriander leaves
1/4 tsp turmeric
1/2 kg boiled & mashed potato
salt to taste
1tbsp ๐Ÿ‹ lemon juice

๐Ÿ’For Besan Batter

2 cup besan
1/4 cup rice flour
1 pinch turmeric
1 tbsp red chilli powder
1 pinch of hing
salt to taste
Required water
oil for deep frying

2 pack pav ๐Ÿž
Fried ๐ŸŸ green chilli
green chutney
Dry garlic chutney power

๐Ÿ’Method

Making Potato Stuffing๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡

Boil potatoes in a pressure cooker for 3 to 4 whistle when it’s cool Peel and then mash them with a hand โœ‹ into a bowl & keep aside .

Heat 2 tbsp oil in a pan. Add mustard seeds and crackle them. Add curry leaves and Asafoetida. Stir and saute for few seconds.1 inch chopped ginger ,2 clove chopped garlic , green chillies paste, Handful โœ‹ chopped coriander leaves ,1/4 tbsp turmeric , boiled & mashed potato, salt to taste mix it well for few minutes now add lemon juice Stir until the raw aroma of garlic goes away.Flatten these balls a bit. Cover and keep aside.

In another bowl, make a smooth batter besan,rice flour, turmeric powder, red chillies power a pinch of asafoetida, & salt to taste and water.The batter should not be too ๐Ÿ‘‰thick or thin. If the batter becomes thin, add gram flour. If the batter becomes thick, waterโ€ฆ ๐Ÿ’ prepared Aloo masala vada mixture and dip in besan batter and coat well.deep fry in hot oil fry till golden brown both sideโ€ฆ Keep aside.

๐Ÿ’Green Chutney

Grind 4 cloves garlic, 1inch ginger, Handfull โœŠ of coriander and 6-8 petals mint leaves , 1/2 tbsp lemon juice, salt to taste, 4 -5 green chilies. Add water as needed while grinding.

๐Ÿ’Method

2 cup of Dry grated ๐Ÿฅฅ Coconut, 2 medium of ๐Ÿ‘‰๐Ÿ’without skin peel Garlic Pods๐Ÿ‘ˆ little tamarind & 50gm Byadgi Dry chillies , Now roast Byadgi chilies and then bring it to room temperature. Add Garlic and Small ball size of tamarind and grind in mixer till its fine powder. Then add grated Coconut ๐Ÿฅฅ and grind for few second.. mix till chilles & garlic mixture is coated on grated coconut and entire mixture becomes coarse power Don’t๐Ÿ‘‰๐Ÿ’ use water ๐Ÿ’ง while grind.๐Ÿ‘ˆ

Now Garlic / Lasoon Chuntey Power is Ready to Serve ๐Ÿ’You can keep in fridge and preserve for a month.๐Ÿ‘ˆ

๐Ÿ‘‰Assembling vada pav๐Ÿ‘‡๐Ÿ‘‡

Now slit the pav and spread green chutney & garlic chutney power. place the prepared vada in center of pav, and place the fried Chillies ๐ŸŒถ๏ธ. finally, press the vada pav and serve immediately.๐Ÿ˜˜
