


Puri With Mix Vegetable Kurma/ Vegetable Sagu
Veg- Kurma is a popular Indian curry in which boiled vegetables are cooked in a creamy and aromatic gravy of yogurt, coconut based paste and sauteed onion & dry spices. You can serve this 💁Veg Kurma Puri ,Ghee Rice, Pulao ,Chapati , Dosa too.
👇👇Ingredients For Masala Paste
1/2 cup Fresh grated coconut 🥥
2 -3 tbsp hurigadale /kadle pappu/ roasted gram
6-8 green chillies
1cardamom
2 clove
1 inch cinnamon
1/4 tbsp cumin seeds
Handfull ✊ of Coriander leaves
6-8 petals pudina
1 inches 🤏ginger
7-8 garlic 🧄cloves
1 small onion
Salt to taste

1/4 cup beans
1/4 cup green peas
1 medium size 🥕 Carrot
1 medium size potatoe 🥔
1/4 cup cauliflower into small pieces🥦
required Water
whatever u r Choice of vegetables you can use.

3 tbsp oil
1/2 tbsp mustard seeds
Curry leaves
1 chopped onion
1/4 cup beaten curd
1/4 tbsp turmeric powder
1/2 tbsp 🤏Sugar
Salt to taste
handfull ✊ Coriander leaves
💁Method
Take a mixer jar. Add all masala ingredients add little water make a fine smooth paste & keep a side.
Wash and cut all vegetables beans, green peas, carrot, potato, cauliflower into small pieces add salt to taste .Cook in pressure cooker for only 1 whistle.
Take thick bottom kadai add 4 tbsp oil, mustard seeds splutter than add curry leaves, Onions, turmeric powder Saute until onion turns translucent.
Add prepared paste.Stir and cook for 2- 5 mins Stir hand ✋ continuously to prevent sticking. Add beaten curd, Salt to taste and sugar mix well and cook for few more mins.
Now add boiled veggies along with cooked water 💁use water drained from boiled vegetables. Taste the gravy for the salt and add it if required. Mix well and cook until gravy turns thick. Stir in between hand ✋ to prevent sticking add chopped coriander leaves mix well .
Turn off the flame and transfer Veg Kurma Curry To Serving Bowl. 💁 You can use serve this Veg Kurma Ghee Rice, Pulao ,Chapati , Dosa & Puri.
