Onion Uttapam With Coconut 🥥 Chutney

💁Ingredients

3 cups Dosa rice
1 cup urad dal
1tbsp methi / fenugreek seeds
1/2 cup Bhel / Puffed rice / Mandaki
salt to taste

💁Method

Firstly, in a large bowl, soak 3 cups of rice & 1 cup urad dal and methi seeds for atleast 4 hours.drain the water from soaked urad dal & rice blend to smooth and fluffy batter. along with Bhel adding water required.

collect it into a large bowl add salt and keep aside.mix well making sure the batter has combined completely.also clean the sides with your hand.✋Cover and ferment in a warm place for 8- 12 hours.the next day you can see the batter has raised well indicating its well fermented. mix the batter slightly.

💁For Topping Uttapam

2 Onion finely chopped
2 Green chillies finely chopped
2tbsp Coriander leaves finely chopped
2tbsp Curry leaves finely chopped
Salt to taste

💁Method

Mix all chopped ingredients and add salt just 💁before making dosa.

Heat dosa tawa just spread 💁11/2 ladle full of dosa batter ,put some Toppings ,drizzle ghee or oil on the sides ,cook dosa on medium flame.flip the dosa and cook both the sides. Ready to Serve With Chutney or Sambhar.

💁Ingredients

1 cup fresh grated coconut 🥥
4-5 tbsp Roasted Gram Splits Chana Dal
3 – 4 green chillies as per ur spicy
Peanut size tamarind
👉Small piece Ginger
1 single garlic bulb /clove
1 string curry leaves
Rock Salt to taste
Handfull ✊ coriander leaves
Water required to add Chutney

👉For seasoning

1 tbsp oil
1/2 tbsp mustard seeds
1 string curry leaves
1 broken red chillies

💁Method

Take small pan add few drops of oil now add green chillies & Curry leaves fry till colour change keep aside.

Take a small mixi jar. Add fresh grated 🥥 coconut ,roasted Gram Splits/Hurigadale
fried green chillies & Curry Leaves,tamarind, Small Ginger pice & 💁1 single garlic bulb /clove & rock salt to taste add little water & Grind to a smooth paste.

💁Just before removing the chutney from mixi jar at this 💁stage add a ✊ handfull of coriander leaves & grind only for 💁2-3 rounds or for few second. As its look tiny tiny pieces of coriander leaves should be shown & float in the chutney. Now add water as required to dilute chutney as ur choice. Thick , thin or runny consistency .

In a small seasoning pan add oil , mustard seeds, curry leaves & broken dry red chilli. Switch Off the flame..Transfer this thadka into chunety bowl mix well.Ready to Serve Hotel Style Neeru Chutney.
