


Mangalorean Kori Sukka ππ Chicken Sukka Can Be Relished With Hot Hot Rice &Dal & Lovely Combination Neer Dosa
Ingredients For Seasoning
πππ 1Kg chicken with bone cut into medium size pieces.
2 tbsp Ghee
2 tbsp oil
1 Medium onion sliced
Few Curry leaves
Handfull β of chopped coriander leaves
Salt to taste
πIngredients For Dry Masala Power
20 Byadagi red chillies +5 Guntur red chillies
1 inches Cinnamon
4-5 Clove
1/4tbsp Fenugreek Seeds
1/4tbsp Mustard seeds
1/2tbsp Pepper corn
1/2 tbsp Fennel seeds /saunf
1tbsp Cumin seeds
2-1/2tbsp Coriander seeds
Ingredients For Friend Coconut π₯₯ Coarse Masala Paste
1 tbsp oil
Few curry leaves
10 Garlic Cloves
1inchs garlic pices
2 medium size Onions sliced
1 tbsp Poppy seeds
1 cup Fresh grated coconut
1/4tbsp Turmeric powder
amla size Tamarind
Salt to taste
πMethod
Take a pan dry roast add mustard seeds, pepper corn,cinnamon, clove ,fennel seeds,
fenugreek seeds, cumin seeds, coriander seeds. Fry it till aroma.keep it aside.
In the same pan add few drops of oil fry 2 types of dry red chillies for few seconds or its crisp. When its completely cool down grind all the above spices along with dry chillies into fine smooth power .Masala powder is ready for Chicken π Sukka.
In the same pan add some oil fry crushed garlic, ginger , Onions, Curry leaves, Saute for few mins on low flame. add poppy seeds, fresh grated π₯₯ coconut & turmeric powder and fry it for some time the coconut should be roasted nicely till light brown.keep it aside.. when its completely cool down. Now coarsely grind the coconut with little water just for 2 -3 rounds in a mixer jar.Now fried ingredients coconut π₯₯ masala paste is ready for sukka.
Meanwhile take a big Kadai or pan add Ghee +oil. Add sliced onions and curry leaves. Fry till the onions turn pink .At this stage add wash & clean chicken π pieces. Saute nicely for few mins. Add some Salt & add π half only masala Power remaining masala powder π added later. Mix it well and cover the lid till the chicken cook well.
Now check the chicken are cooked add remaining masala power to the chicken leaves water π if required add little water to it & cover for few mins ..
Once chicken cook add fried ingredients coconut π₯₯ masala coarse Paste & Handfull β of chopped coriander leaves.π Remember it’s for Sukka. Don’t put π lot of water.stir well & Cover it with lid for some time. Switch off the flame.Mangalorean Style Chicken ππ Sukka is Ready to Serve Can Be Relished With Hot Hot Rice, Dal & Neer Dosa .
