💁This is a konkani favorite of banana stem stir fry.  Banana stem has got lots of health benefits, its is very easy to use, tasty and good for health too. If possible include this in your diet at least once in a month in any forms.

💁👇Ingredients For Seasoning

2 cup cooked Banana 🍌 stem
2 tbsp Oil
1/2 tbsp mustard seeds
8 -10 without Peele cloves crushed Garlic
1 sprig Curry leaves
1 Onion chopped
Little Coriander leaves

For Banana Stem Stir Fry
Masala Coarse Paste … Ingredients👇💁

1/2 cup fresh grated coconut
💁4-5 Dry Guntur red chillies + 5 Byadgi red chillies.
1 tbsp Coriander Seeds
1/4 tbsp Methi Seeds
1/2 tbsp Jeera
Raw 4-6 cloves Garlic
Raw 1 medium onions
tamarind
Salt
Jaggery

💁👇Method

Cut a medium sized banana stem into roundels. Remove the excess fibre. Chop them cubes.

In a pressure cooker cook along with 1 cups of water, salt and pressure cook it for 2 whistle until the stem are done.Once done, allow the pressure to release naturally. 💁Drain the excess water from the stem and keep aside.

In a small pan add the dry red chillies, coriander seeds, cumin seeds, methi seeds, Roast all of them over medium heat until the change colour. Let it cool.

Once cooled add this roasted Masala ingredients into the mixer grinder and 👉add Coconut 🥥 1 medium size raw onion, covers raw garlic, small size tamarind, turmeric powder ,salt to taste and jaggery add little water 💧👉Don’t use lot of water we need dry masala blend to make a coarse paste Keep this Masala aside.

Heat a sauce pan with oil add mustard seeds and allow it to crackle. Add the curry leaves, without Peele crusted garlic and onions and saute until the onions soften.Once the onions soften, add cooked Banana Stem. If required add salt and adjust according to taste… add the ground Masala coarse paste …Stir well to combine and cover the pan and allow the stem to absorb all the spices by cooking it for 5mins. Once done, turn off the heat and serve Garnish with fresh coriander leaves the Banana Stem Stir Fry.. Along with Hot Rice or Neer Dosa & Chapathi as a Side Dish ..💞
