



Mangalore Goli Baje
šMangaloreĀ Goli Baje is a delicious evening snack made with flour and curd. These bajjis are usually served along with coconut chutneyĀ andĀ cup of coffee which is a must along with it.Mangalore Bajji, It is made using maida which is mixed with a sour curd, chili, coriander, grated coconut mixture and soaked for an hour before frying them in hot oil.š It is fairly easy to make, and requires very few ingredients that are easily found in the pantry.

2 cups Maida
2 -3 tbsp rice flour
3tbsp Gram flour / besan
1 cup CurdĀ Ā YogurtĀ sour
1/4Ā tbsp Baking soda
6 -8 Green Chillies , finely chopped
1 inchĀ gingerĀ Finally choppedĀ
Few curry leavesĀ
Handfull ā of chopped Coriander LeavesĀ
2 cups oil , for frying
1 tbsp sugar
Salt to taste
To begin making Mangalore Bajji šGoli Baje Take a big bowl, add the sour curd and whisk it till you attain a creamy texture.To this add the chopped green chillies, coriander leaves,Ā ginger, curry leaves and salt & sugarĀ mix well.
Slowly add in the maidaĀ & Gram flour / besan flour andĀ rice flour mix well. Add if required ļ§š water little at a time till you get a thick pouring batter consistency.
Add the baking soda, with salt, mix well and keep it rest for half hour.
Heat oil in a kadai .In the meanwhile, whisk the Mangalore Bajji batter. Once the oil is hot, drop half a tbsp amount of batter into the hot oil. Let it cook and turn golden on one side.Flip over and cook the other side as well. This will take 2 -3minutes. Remove it in a kitchen towel and proceed to make the rest of the Gole Baje with the remaining batter. Serve Mangalore BajjiĀ along withĀ š„„ mom Coconut Chutney…
