Upsaaru & Palya/Stir-Fry
The literal meaning of basida saaru is Drained water or vegetable stock
Ingredients
💁Here I used only Drumsticks leaves & Sabsige/
Dil leaves.
💁You call use all mixed green leaves like green Amaranth leaves, Dantina soppu, palak .
💁For Chutney Or Hasi khara
1 bunch Coriander leaves
6-8 💁cooked Green chillies ..We want the chutney to be very spicy as per ur spicy u can add 💁chillies
Small marble size Tamarind
1 tbsp Cumin seeds
1/2 tbsp Pepper Corns
6-8 pods Garlic
Salt to taste
💁Other Ingredients For
Palya/Stir-Fry
2 cup Drumsticks leaves
1 bunch Sabsige/ Dil leaves
1/2 green gram & 1/2 kg Ridge gourd dal / Heerekayi
2 tbsp oil
1/4 tbsp Mustard seed
4 Green chillies
1/2 cup Onion
3tbsp Fresh coconut
Salt to taste
Method
Wash the green leaves in running water add about 3 -4 cups of water & boil the Drumsticks leaves Sabsige/ Dil leaves & green gram .
In a sauce open pan…Add salt for tasty .. Keep adding water if you find the very thick. You might need of cups of water. Ridge gourd dal / Heerekayi , green gram, Dil leaves & drumstick leaves Cook till 90 % 💁 don’t over cook till smashy . Drain the water save the drained water. We will make a upsaaru saru using the drained water.
💁Palya/Stir-Fry
Add oil to a pan. Once the oil is hot, add mustard When seeds crackle, add green chillies now add finely chopped onions & saute till the onions turn translucent.When the onions are cooked, add the green leaves & green gram mixture add if required some salt & fresh coconut . Cover & cook for 5 mins give it a mix Turn off the heat . Ready to serve…
For the Hasi khara Chutney
Soaked tamarind, garlic along with the skin of the garlic Add coriander leaves, cooked green chillies, cumin seeds, salt, pepper corns If needed add water few drops In a small jar make it fine paste. Scoop out the chutney in a separate bowl.
💁For Upsaaru
Add about a tbsp of khara/chutney prepared to the drained water 💁Stocking & mix. Adjust the salt & boil it. Upsaaru is ready. Optional seasoning with mustard seeds,broken red chillies and curry leaves.
💁Finally serve the Thali Add a portion of mudde / ragi balls to a plate. Pour in cup of saaru, Palya/Stir Fry at the side along with a tsp of extra spicy Chutney. For adjust the spice level of the Upsaaru.. Enjoy your delicious Mouthwatering Upsaaru Mudde…
