Lemon Rice πŸ‹ is an easy rice preparation which has an amazing taste. Ingredients For Lemon Rice πŸ‹

2 Cup Raw Rice /Cooked Rice
2 tbsp Peanuts & few cashew nuts
Few Curry Leaves
4 to 6 Green Chillies & 1/4 cup chopped capsicum optional you can skip
1tbsp Mustard Seeds
1/2 tbsp Urad Dal
1/2 tbsp Chana Dal
1/2 tbsp Turmeric Powder
Salt to
2 tbsp Lemon Juice πŸ‹
2 to 4 tbsp Oil
Handfull ✊ Chopped coriander leaves

Method

Wash and rinse 2 cup of Rice along with water. Then add them in a pressure cooker. If cooking in an open pot, add 4 cups of Water. πŸ’Cook the rice till you get 2 whistles then wait for it to cool down. Then gently fluff the rice with a fork. πŸ‘‰You can also use leftover rice.set them aside.

In the pan, add 3 tbsp oil Mustard Seeds and let them crackle.When the Mustard Seeds start to splutter, add peanuts and cashew nuts fry them for a few seconds. Add urad dal ,chana dal . Fry them till they turn golden brown. Add few Curry Leaves along with finely chopped Green Chillies & capsicum to the pan fry them nicely for few mins.Then add turmeric Powder . add chopped onions fry them for a few seconds.Remove from heat . Add 2 to 3 tbsp Lemon πŸ‹ Juice as per ur tasty .Add the cooked rice to the pan. Salt to taste & Chopped coriander leaves. Toss the rice gently to coat them in the tempering. and mix everything together. Turn off the heat and let the rice sit rest for 5 minutes. Ready to Serve Lemon πŸ‹Rice.. 🍚
