


Methi Pulao / Menthe Soppina Pulav / Fenugreek Rice..
A Healthy Flavourful Rice Prepared From Fresh Methi Leaves

πYou can add additional #Vegetables to this bath if you like. π But here I not used any veggies..
ππIngredients
2 cup raw Rice /π u can use any brand rice up to ur choice
4 cup of water
4 tbsp Oil
2 tbsp ghee
1 Bay leaf
2 cardamom
2 elaichi
1 piece Cinnamon
4 – 5 Cloves
1 Star Anise
1 cup methi / fenugreek leaves
1/4 cup green peas
1/4 cup Soya bean chunks
2 to 3 large onion sliced long
2 chopped tomatoes
Salt to taste
ππFor Masala Paste
1 inche ginger
6-7 garlic
4 -6 Green Chillies
1 medium size roughly chopped onion
1/4 cup of fresh grated coconut π₯₯
Handfull β of chopped leaves
Few 8-10 leaves of pudina
Salt to taste
Required water for Masala paste..
ππ Method
Remove hard stems of methi leaves. Use only leaves and tender stems.Wash the methi leaves and chop them coarsely.
Take a pan add 3 cup of water Boil it add soya chunks. switch the flame after for 8-10minutes transfer to a bowl of cold water.allow to rest for 3 minutes and squeeze completely.
Wash and soak rice in water for 5 mins. Drain water completely.
Meanwhile Prepare Masala Paste. πadd coconut π₯₯About 4-5 tbsp only, 1/4 small cup Along with ginger, garlic, Green Chillies, medium size roughly chopped onion, Handfull β of chopped leaves ,pudina & Salt to taste. Adding half a cup of water. πDo super fine paste.Once it is ground finely Keep aside.
In a pressure cooker heat oil + ghee together. Once its hot add bay leaf ,star anise, elaichi ,cloves,cinnamon and cardamom .Once the splutter, add onion Saute nicely till onion turns pinkish in color.
Next Add fenugreek leaves and
Saute for 2-3 mins. Add tomato & green peas .at this stage Prepared Masala Paste. Saute nicely till oil & Ghee zoom out from sides.
Add rice and fry well for 3-4 mins. This will help in bringing out nice aroma from the rice.
Add hot water and if required add salt to the rice mixture. Mix well. Once the water starts boiling, close the lid and keep the flame to high . Cook for 2 whistles and switch off the flame.
Once the pressure releases. Serve the delicious Methi pulao with ur choice of raita β¦ π€π
