Chicken Layered Dum Biryani 🐥🐣 🐔🍗

Chicken🐔 🍗 Layered Dum Biryani is a heaven on the plate ..that’s what I always say. Fragrant rice with hard boiled eggs and aromatic masala is a delicious combination that comes together in my favourite biryani. Chicken biryani recipe which is cooked in Dum Biryani Style is easily one of the best Chicken recipes ever.👍👌 Biryani is it cooked in dum in such a way that each grain of rice is separated and masala is fully absorbed.😘😋

💁👇Ingredients

3 tbsp Ghee
1/4 cup Oil
4-5 Onion large sliced thinly
1/4 tsp Rose water
Handfull ✊Coriander Leaves ¼
2 roughly chopped Tomato 🍅 paste
1 pinch Saffron food colour
Few cashew nuts
4 boiled Eggs

For Chicken Marination

1 kg Chicken
1/2 cup Yogurt
1 tbsp red Chilli powder
1/4 tsp turmeric powder
1 tbsp coriander powder
Salt to taste
2 tbsp Ginger Garlic Paste
1 tbsp Lemon Juice
4 -5 tbsp oil
Coriander Leaves chopped
Mint Leaves chopped
1/2 tbsp biryani Masala Powder
1/2 cup water for gravy

For Rice

2 cup Basmati Rice
Water lots of it
1/2 tbsp Pepper corn
2 stick Cinnamon stick
2 -3 Star Anise
6 Cardamom powder
6 Cloves & green chillies
3 Bay Leaf
Lemon juice
Salt to taste

Method

Heat oil in a pan, deep fry onions and fry till golden. Set aside ½ of the fried onions for topping.1/2 Fried onions for gravy.

Now take chicken in a bowl, add all ingredients given for marination. Add ½ of the fried onions and onion fried leftover oil. Mix well and leave to marinate for 1hour.

Now take basmati rice and wash well. Soak for 20 mins. Now bring lots of water to a boil. Add all whole spices, green chillies,oil and salt. Once it boils, add rice and cook till it is 75% cooked. Drain and set aside.

After 1 hour. In a kadai add the marinated chicken pieces and cook the chicken in high flame well. Now add tomato paste few drops Rose water & Handfull ✊of Coriander Leaves add 1/2 cup water for gravy mix it nicely . Close the lid cook on low flame till oil Zoom out from side well.

Layering

In a big vessel spread a base layer of rice, then spread the chicken gravy & pieces spread add another layer of rice, spread the masala & pieces over this rice and finally spread the last layer of the rice.Add boiled eggs Sprinkle biryani masala power ,few cashew nut pieces & saffron colour , chopped coriander leaves , pudina leaves & fried onions.

Make it in middle holes with the help of knife and pour 2tbsp dash of cooked rice stock water in each of the holes. Add pour 2 tbsp ghee on top . Close the lid tightly . Cook it on lowest heat for 15 minutes and Ready to Serve Chicken Layered Dum Biryani hot with a Sides of Raita..
