๐๐ Ingredients For Set Dosa Batter
3 cup dosa rice
3/4 cup urad dal
1 tbsp fenugreek seeds
Handfull โ beaten rice
poha / avalakki thick
Salt to taste
๐๐Method
Firstly, in a large bowl take rice, urad dal, also add ยผ cup poha and soak for 4-5 hours.now transfer the soaked rice, urad dal ,poha & fenugreek into the blender.additionally, add 1 water .blend to smooth batter adding water as required.mix well making sure everything is combined well. cover and ferment the batter for 8 hours.now mix the batter gently, make sure the batter is flowing consistency. Add salt to taste and mix well.
Heat the griddle and pour a ladleful of batter.spread out๐slightly thick than regular dosa.๐cover and roast the dosa to a golden brown from the bottom and completely cooked from the top in presence of steam. Flip the other side & cook finally, enjoy Set Dosa With Chutney or Veg kurma.

๐๐Ingredients For Masala Paste
2 tbsp Soak poppy seeds
4 cashew nuts
1/2 Cup fresh grated coconut
4 to 6 green chilli
2cardamom
2 clove
1 inch cinnamon
1/4 tbsp pepper corns.
๐๐Veggies & sprouts
3 tbsp matki
4tbsp Green gram
1/4 cup green peas
1/4 cup Channa
1/4 cup beans
1 medium size Carrot
1 medium size Potatoes
required Water
whatever u r Choice of vegetables you can use.
1 cup mixed Sported optional
ur choice you can skip . Only u can use vegetable.
๐๐For seasoning
3 tbsp oil
1bay leaf
1 chopped onion
1 tbsp ginger garlic paste
1 chopped tomato
1/2 cup beaten curd
1/2 tbsp red chili powder
1/4 tbsp cumin
1/4 tbsp coriander powder
1/4 tbsp turmeric powder
Salt to taste
handfull โ Coriander leaves
Method

First take 2 tbsp Soak poppy seeds in hot water and cashew nuts in hot water for keep aside 10mins. Drain excess water from cashew nuts and add to the small chutney jar of a grinder. Add soaked poppy seeds along with water. Grind them until medium coarse texture. If required, add water. Add coconut, green chilli, cardamom, clove, cinnamon and black peppercorns.Grind to a smooth paste. If required, add water and grind again.
Wash the all mixed sprouts and then soak for 5 to 6 hours.Drain the water and transfer the soaked sprout in a cloth tie it nicely for sprouting. Keep in a warm place for 1 day. Next day Transfer the sprouts in a pressure cooker once wash the sproutsโฆ Now along with salt and cups of ๐ง water. Pressure cook for 3 whistles.when its cool open it.
Wash and cut all vegetables beans, carrot, potato into small pieces.
In a pan add 2 cups of water over medium flame. Add diced potato salt and boil it for 5-mins. Add diced carrot, beans and boil until all veggies are tender but little crunchy, it will take around 10 mins.๐Turn off flame and drain excess water, keep boiled water for later use in the gravy.
Heat 3 tbsp oil in a pan . Add bay leaf and chopped onion. Saute until onion turns translucent. Add ginger garlic paste & saute for few mins Add chopped tomato.Cook until tomatoes turn soft. Add prepared paste.Stir and cook for 2- 5 mins Stir hand โcontinuously to prevent sticking.Add beaten curd, red chili powder, cumin & coriander powder and turmeric powder.Mix well and cook for few mins mins. Now add boiled veggies along with cooked water add cooked sprouts.
๐use water drained from boiled vegetables. Taste the gravy for the salt and add it if required.Mix well and cook until gravy turns thick. Stir in between hand โ to prevent sticking add chopped coriander leaves mix well .Turn off the flame and transfer Mixed sprouts & Veg Kurma Curry To Serving Bowl. ๐Use can serve this Mixed Sprouts Veg Kurma With Chapati , Dosa & Puri.
