


Chilled Super Soft Dahi Vada /Dahi Bhalla
Green Chutney
Ingredients👇👇
1✊ handfull / 1 bunch Coriander leaves
6 to 8 Green chillies as per ur spicy
3 pods Garlic
1 inch Ginger
1 tbsp Lemon 🍋 juice
Rock salt to taste
1 inch Black salt
Little Water
Method
In a mixer jar, add coriander, along with green chillies, garlic, ginger, salt and Black salt blend into a smooth paste. If needed add 1or 2 tbsp of water, here I added only 1tbsp.Add lemon juice, mix well and adjust the salt according to your taste.Transfer into an airtight glass jar and can store it in the fridge up to👉 1 weeks.Enjoy this delicious spicy chutney with favourite snacks or sandwiches
Tamarind sweet Chutney
Ingredients👇👇
50 gm soaked tamarind
1 cup jaggery
2 cups of water
2 tbsp kashmiri red chili powder
1/2 tbsp fennel powder
1 tbsp coriander powder
1/2 tbsp cumin
salt to taste
Method
Take in a large kadai 50 gm soaked tamarind and 1 cup jaggery now pour 2 cups of water.mix and boil it nicely… 2 tbsp kashmiri red chili powder, add 1/2 tbsp fennel powder, 1 tbsp coriander powder, 1/2 tbsp cumin & also add salt to taste. mix well .when it’s cool mixture now transfer the tamarind mixture to the mixer and blend it smooth puree.Tamarind Sweet Chutney is Ready. Now pour airtight jar and store it in the refrigerator..👉U can use the prepared tamarind sweet chutney in preparing… with all types of chats like… Dhai Vada ,sev puri, bhel puri or pani puri👈

Ingredients for Vada
1 1/2 cups of urad dal
2 tbsp of idli rice rava
5to 6 green chillies
5 tbsp of fresh chopped coconut pieces🌴
3 string few curry leaves
1 inch ginger finely chopped +chopped fresh coriander leave
salt to taste
1🤏pinch of soda
oil to fry
Wash and soak dal 2-3 hours.
Drain all the water from soaked dal. grind urad dal smooth paste using very 👉little water👈i have used grinding stone,

wet grinder or even mixer grinder u can be used.
The batter should be thick and use very little water.the right consistency is very important or otherwise, you will not be able to get the 👉Vada shape.add green chilli, ginger and chopped 🌴coconut pieces, salt & soda to the batter. mix it very well.👉add 2 to 3 tbsp of idli Rava is added to make it crispy. to make it more digestible.
Heat the oil in a frying pan in medium flame….👇👇👇👇till golden brown… Drain of the vada on tissues paper to absorb oil..
#Dahi_Vada_ Plating
Drain off the vadas on to tissue paper to absorb oil. 💁Immediately, drop the vadas into lukewarm 💦water and dip the vadas completely.👈soak for 2minutes and allow the vadas to absorb water keep aside..
Take a pan add 2 tbsp oil… 1/2 tbsp Mustard seeds, udad daal, chana dal curry leaves few chopped whole red chillies fry it nicely.Now pour chilled 2 cup curd & salt , 3 sugar… & coriander leaves. Mix it nicely..
Furthermore, squeeze off the water by pressing between your palm.✋place squeezed vadas on the serving plate.Now
pour in 3 tbsp thick whisked masala seasoning chilled curd.furthermore, add spicy green chutney & sweet chunety sprinkle 🤏pinch of red chilli powder & chat masala Power . Lots of Kara Boondis.. Finally Serve Dahi Vada Garnished With Few Coriander Leaves.😋😍😘👌👌
